Laurie’s Pressed Salad
Ingredients
1/2 cabbage (red or green or a combination) sliced very thin
1/2 medium onion (red or yellow or a combination) sliced very thin
1/2 cucumbers sliced very thin
1 carrot grated
2-3 radishes grated
1 tsp sea salt
Directions
Combine all these colorful veggies with the salt.
Put in salad press or a container where you can top them with a plate.
Turn the salad press until it’s nice and tightly pressed or put a heavy weight on top of the plate to press the vegetables.
Wait for a at least 3 hours to enjoy. Serve as a side, in a sandwich, or as a stand-alone salad.
