New Onions (chopped fine)
Okra (stemmed and cut if piece is over 2")
Big Red Tomatoes (diced)
Salt (or to taste)
Black Pepper
Cinnamon

instructions
- Warm up the olive oil and chili powder in a pot over medium heat
- Add the chopped onion and cook for at least 5 minutes, stirring occasionally
- Once the onion is soft and starting to color, stir in the okra and then add the tomatoes
- Sprinkle in the salt, black pepper and cinnamon. Give it another stir, cover and simmer for a half an hour on medium low temperature
- At this point your vegetables are cooked and fragrant. Take off the cover and continue simmering for another 15 minutes
