This is a great seasonal recipe!  As it happens, all three main ingredients are in abundance right now.

This is a great seasonal recipe!  As it happens, all three main ingredients are in abundance right now.


Ingredients

  • 1/4 tsp
  • 2 tbsp
  • 2
  • 1 1/2 lbs.
  • 2
  • 1/2 tsp
  • 1/2 tsp
  • 1 tsp

Chili Powder
Olive Oil
New Onions (chopped fine)
Okra (stemmed and cut if piece is over 2")
Big Red Tomatoes (diced)
Salt (or to taste)
Black Pepper
Cinnamon

servings: 4


instructions

  1.  Warm up the olive oil and chili powder in a pot over medium heat
     
  2.  Add the chopped onion and cook for at least 5 minutes, stirring occasionally
     
  3.  Once the onion is soft and starting to color, stir in the okra and then add the tomatoes
     
  4.  Sprinkle in the salt, black pepper and cinnamon.  Give it another stir, cover and simmer for a half an hour on medium low temperature
     
  5.  At this point your vegetables are cooked and fragrant.  Take off the cover and continue simmering for another 15 minutes
