Lemongrass Chicken Wings

Serves: 4-6 as an appetizer or snack
Prep time: 10 minutes + marinating time
Cooking time: 25 minutes


Ingredients

  • 1 ½ lbs chicken wings

  • 2 tbsp crushed roasted peanuts

  • 2 tbsp finely chopped fresh cilantro

    Marinade:

  • 2 cloves garlic, minced

  • 2 tbsp finely chopped shallots or red onion

  • 2 tsp minced fresh ginger

  • 2 tbsp minced lemongrass

  • 1 tbsp brown sugar

  • 2 tbsp fish sauce

  • 1 ½ tbsp freshly squeezed lime or lemon juice

  • 2 tbsp oil

Directions

  1. Whisk together the marinade ingredients in a large mixing bowl. Place chicken wings in a large bowl. Pour the marinade mixture over the chicken wings. Refrigerate for 2 - 12 hours.

  2. Preheat a broiler. Arrange the wings on a broiler pan. Broil the wings for 10 - 11 minutes, turn over and broil for another 10 - 11 minutes until golden brown, remove from the broiler and garnish with peanuts and fresh cilantro. 

    Serve immediately.
