Lemongrass Chicken Wings

Serves: 4-6 as an appetizer or snack
Prep time: 10 minutes + marinating time
Cooking time: 25 minutes
Ingredients
1 ½ lbs chicken wings
2 tbsp crushed roasted peanuts
2 tbsp finely chopped fresh cilantro
Marinade:
2 cloves garlic, minced
2 tbsp finely chopped shallots or red onion
2 tsp minced fresh ginger
2 tbsp minced lemongrass
1 tbsp brown sugar
2 tbsp fish sauce
1 ½ tbsp freshly squeezed lime or lemon juice
2 tbsp oil
Directions
Whisk together the marinade ingredients in a large mixing bowl. Place chicken wings in a large bowl. Pour the marinade mixture over the chicken wings. Refrigerate for 2 - 12 hours.
Preheat a broiler. Arrange the wings on a broiler pan. Broil the wings for 10 - 11 minutes, turn over and broil for another 10 - 11 minutes until golden brown, remove from the broiler and garnish with peanuts and fresh cilantro.
Serve immediately.
