Enjoy your own homemade ginger ale with this super easy recipe. You can make it flat or bubbly, or you can freeze the syrup and enjoy throughout the summer.
Makes about 2 quarts.
Ingredients
¾lb to 1lb Chopped ginger (depending on how spicy you want it)
Water 2 quarts*
*For a bubbly drink, puree the ginger with 2-3 cups of regular water, then use club soda or sparkling water to bring the total amount of liquid to 2 quarts.
⅔ cup Sugar
Lemons or limes, juice only 2-3
Directions
Place the chopped ginger, 3 cups of the water and ⅔ cup sugar in a blender and puree well. Let sit for at least 30 minutes or overnight to extract the flavor.
Strain the liquid through a fine-meshed sieve and pour into a pitcher.^ Add enough water to make 2 quarts and stir in the lemon or lime juice and additional sugar to taste.
^At this point you can put your syrup in a container and freeze, leaving an inch or two of airspace at the top for expansion.
Chill well before serving.
