Frittatas are extremely versatile and fast to make. They make a great meal, whether it be breakfast, lunch or dinner.
Ingredients
2 tbsp olive oil
A pinch of chili powder
¼ cup shredded onion
1 cup shredded potato (1 medium)
½ cup diced sweet pepper
1 cup of steamed greens (if you are using baby spinach, no need to steam ahead)
½ tsp sea salt (adjust to your taste)
½ cup feta
6 eggs
Directions
Preheat oven to 350F.
Turn your burner to medium heat. Heat the olive oil and chili powder
in a frying pan that is stove and oven safe (less to clean afterwards).Add the onion, saute for 2 minutes and add the potato and sweet pepper. Cover and let cook for about 5 minutes making sure to stir occasionally so nothing burns.
While your mix is cooking, break the eggs in a bowl and add the salt. Stir until white and yolks are blended.
Add the greens to the frying pan and stir for a minute. Break up the feta and spread on
top of the frying pan mixture. Next add the eggs.Transfer the pan in the preheated oven and bake for about 10 minutes. Enjoy!
