Frittatas are extremely versatile and fast to make.  They make a great meal, whether it be breakfast, lunch or dinner.


Ingredients

  • 2 tbsp olive oil

  • A pinch of chili powder

  • ¼ cup shredded onion

  • 1 cup shredded potato (1 medium)

  • ½ cup diced sweet pepper

  • 1 cup of steamed greens (if you are using baby spinach, no need to steam ahead) 

  • ½ tsp sea salt (adjust to your taste)

  • ½ cup feta 

  • 6 eggs

Directions

  1. Preheat oven to 350F.

  2. Turn your burner to medium heat. Heat the olive oil and chili powder
    in a frying pan that is stove and oven safe (less to clean afterwards).

  3. Add the onion, saute for 2 minutes and add the potato and sweet pepper. Cover and let cook for about 5 minutes making sure to stir occasionally so nothing burns.

  4. While your mix is cooking, break the eggs in a bowl and add the salt.  Stir until white and yolks are blended.

  5. Add the greens to the frying pan and stir for a minute.  Break up the feta and spread on
    top of the frying pan mixture.  Next add the eggs.

  6. Transfer the pan in the preheated oven and bake for about 10 minutes. Enjoy!
