Flavorful and healthy, this version is seasoned with Middle Eastern Spices.

Ingredients

  • 1 onion, diced

  • 6 cloves of garlic, minced

  • 1 tbsp salt

  • 1 tbsp cumin, ground

  • 2 tsp coriander, ground

  • 2 tsp curry powder

  • 1 tsp turmeric powder

  • ½ tsp allspice, ground

  • 1 bay leaf

  • 4 cups total diced vegetables - turnips, carrots, daikon, potatoes, kale (really whatever you have available)

  • 2 tbsp tomato paste

  • 2 diced tomatoes

  • 6 cups water

  • 1 ¼ cups lentils (we used green lentils, but any lentils will work - adjust the cooking time if using smaller varieties)

Directions

  1. In a pot, saute the onion and garlic for about 6 minutes, or until the onion is soft.   Add the spices and stir for a couple of minutes to release the aroma.  Add the vegetables, cover and allow to soften, about 15 minutes.  

  2. Add the tomato paste and diced tomatoes to the mix.  After the tomatoes soften, add the lentils and water.  Allow to simmer for about 35-40 minutes.  

  3. Remove the bay leaf and serve.  The aroma and taste are phenomenal!
