Serves: 6 | Prep Time: 10 minutes | Cook Time: 30 minutes

ingredients

  • 1 Tbsp Eden Sesame Oil, or Toasted Sesame Oil

  • 2 cups burdock root, julienned

  • 2 cups carrots, julienned

  • 2 cups water

  • 1 Tbsp Eden Shoyu Soy Sauce

  • 2 Tbsp green onions, thinly sliced

  • 1 Tbsp dry pan toasted tan sesame seeds, for garnish

Directions

  1. Heat up oil in a heavy skillet, and sauté the burdock for 3 to 4 minutes.

  2. Lay the carrots on top and add water to just cover the burdock.

  3. Cover and bring to a boil. Reduce the heat to medium-low, and simmer for 20 to 25 minutes.

  4. Reduce the heat to low, add the shoyu, cover and cook another 5 minutes.

  5. Remove the cover, mix and cook off most of the remaining liquid.

  6. Toss in the green onion the last minute of cooking.

  7. Place in a dish and sprinkle with toasted sesame seeds for garnish.
