ingredients
1 Tbsp Eden Sesame Oil, or Toasted Sesame Oil
2 cups burdock root, julienned
2 cups carrots, julienned
2 cups water
1 Tbsp Eden Shoyu Soy Sauce
2 Tbsp green onions, thinly sliced
1 Tbsp dry pan toasted tan sesame seeds, for garnish
Directions
Heat up oil in a heavy skillet, and sauté the burdock for 3 to 4 minutes.
Lay the carrots on top and add water to just cover the burdock.
Cover and bring to a boil. Reduce the heat to medium-low, and simmer for 20 to 25 minutes.
Reduce the heat to low, add the shoyu, cover and cook another 5 minutes.
Remove the cover, mix and cook off most of the remaining liquid.
Toss in the green onion the last minute of cooking.
Place in a dish and sprinkle with toasted sesame seeds for garnish.
