Okra with Tomato Sauce ala Eliana
This is a great seasonal recipe! As it happens, all three main ingredients are in abundance right now.
stemmed and cut if piece is over 2 inches
big red tomatoes
(or to taste)
Warm up the olive oil and chili in a pot over medium heat.
Add the chopped onion and cook for at least 5 minutes, stirring occasionally.
Once the onion is soft and starting to color, stir in the okra, and then add the tomatoes.
Sprinkle in the salt, black pepper and cinnamon, give it another stir, cover and simmer for half hour on medium low.
At this point your vegetables are cooked and fragrant. Take off the cover and continue simmering for another 15 minutes.
